big plans.

I have big plans for the weekend...to do a round of freezer cooking. I hope to make 3 meatloaf's (or is it meatloaves?), burrito meat filling (enough for 3 dinners), macaroni and cheese (3-5pans) and baked ziti (3pans). So before I can do all of this I need to buy some throw away pans and ziploc bags. I have been reading about freezer cooking and I dont have the space to do a major freezer cooking but I think this will be plenty. I might have to cut back and do just 2 pans of ziti and 2 pans of mac n cheese. I am going to do a test with the empty trays to make sure I can fit everything before I start cooking. The meatloaf will just be mixed up and frozen no need to cook because when I am ready to make it for dinner I can defrost the meatloaf and bak as usual. The burrito meat will have to be cooked and then frozen....then when we want to have burritos all I have to do is throw the frozen meat in the crock pot on low until dinner time. The ziti and macaroni will be all cooked and then frozen, to reheat I read that you defrost and then bake or you can just bake it frozen. I am not sure the best way to do this but I am going to read some more and then try it. Any suggestions? or Recipes that work well for freezer cooking? I am excited because I enjoy cooking but some days I have limited time so this should help me with time management too. I will post how it goes :)

I have yet to master the art of freezer cooking...let us know how it turns out! My kids don't like casseroles or lasagnas and all that...I still make them eat it, but it's not always worth all the effort :) I do like to make a big batch of meatballs to freeze. Then you can just heat up what you need. I cook them first (baking is easiest) so that I don't have to worry about that later. And freeze them flat at first so you know they will not turn into a big frozen blob of meat. Have fun with your project and be sure to share your recipes! :)

attacking someone on their web site isnt very nice. but just in case anonymous wants to know i did not know parson brown was a minister and i dont think i have ever heard that in a sermon..so i am not sure how being a devout church member has anything to do with this song. and i wasnt trying to ruin CHRISTMAS!! i never thought about the meaning until someone else brought it up and i always thought parson brown was just a color...and to tell you the truth i never thought anything sexual about the song and in re-reading my post there is not a mention of the "questionable" part of the song being about anything sexual...well everyone is entitled to their opinions. sorry if i offeneded anyone it was not meant to be offensive. merry christmas.

landing in atlantic city

so when i flew in from california i had a window seat and when the plane came around the southern tip of new jersey as it always does i saw the cape may light house and then all around for miles i saw the most beautiful sight! it looked like new jersey was on fire...actually like there were many small fires in patches as far as i could see. since ther was no smoke i knew it wasnt fire. the autumn leaves had all begun turning before i left but it was dark when i took off and i didnt have a window seat...so the landing was spectacular!! i cant even begin to explain how cool it was to see fall from the air. i have been wanting to type this since i got back but just havent had time. if you have never seen fall...i mean the fall where all the trees leaves turn and then begin to fall you should consider coming to visit us in the fall...another cool thing is when you drive down the street the leaves are falling and every once in a while it is like the sky is raining orange, red and yellow lea
